Low Sugar, Gluten-free Banana Bread

- 1 1/2 c. Gluten-free All Purpose baking flour
- 1 ½ c. Rice Flour
- 1/2 c. sugar (I prefer raw cane sugar)
- ½ c Stevia
- 1 tsp. salt
- 1 1/4 tsp. baking powder
- 1 1/4 tsp. soda
- 2/3 c. Almond milk (unsweetened if you prefer to lower the sugar even more)
- 1/2 c. plain nonfat Greek yogurt
- 2 tbsp. melted Coconut Oil
- 2/3 c. egg whites or egg beaters
- 1 1/2 c. mashed ripe bananas
- 1 tsp. vanilla
- 1 tsp. cinnamon (or to taste)
- Heat oven to 350 degrees. Measure all ingredients into large mixer bowl and blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into either 2 prepared loaf pans or a prepared muffin baking pan. Bake 35 minutes to 1 hour or until wooden pick inserted in center comes out clean.
