    Low Sugar, Gluten-free Banana Bread

    Ingredients
    1. 1 1/2 c. Gluten-free All Purpose baking flour
    2. 1 ½ c. Rice Flour
    3. 1/2 c. sugar (I prefer raw cane sugar)
    4. ½ c Stevia
    5. 1 tsp. salt
    6. 1 1/4 tsp. baking powder
    7. 1 1/4 tsp. soda
    8. 2/3 c. Almond milk (unsweetened if you prefer to lower the sugar even more)
    9. 1/2 c. plain nonfat Greek yogurt
    10. 2 tbsp. melted Coconut Oil
    11. 2/3 c. egg whites or egg beaters
    12. 1 1/2 c. mashed ripe bananas
    13. 1 tsp. vanilla
    14. 1 tsp. cinnamon (or to taste)
    Instructions
    1. Heat oven to 350 degrees. Measure all ingredients into large mixer bowl and blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into either 2 prepared loaf pans or a prepared muffin baking pan. Bake 35 minutes to 1 hour or until wooden pick inserted in center comes out clean.
