    Low Fat/Lower Calorie Banana Bread

    Ingredients
    1. 2 1/4 c. whole wheat flour
    2. 1 c. sugar (I prefer raw cane sugar)
    3. ½ c Stevia
    4. 1 tsp. salt
    5. 1 1/4 tsp. baking powder
    6. 1 1/4 tsp. soda
    7. 2/3 c. Almond milk
    8. 1/2 c. plain nonfat yogurt
    9. 2 tbsp. unsweetened applesauce
    10. 2/3 c. egg whites or egg beaters
    11. 1 1/2 c. mashed ripe bananas
    12. 1 tsp. vanilla
    13. 1 tsp. cinnamon (or to taste)
    Instructions
    1. Heat oven to 350 degrees. Measure all ingredients into large mixer bowl and blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into either 2 loaf pans or 1 square baking pan. Bake 50 minutes to 1 hour or until wooden pick inserted in center comes out clean.
